Zucchini/Summer Squash

STORAGE TIP: Do not wash until ready to use. Store in an open plastic or paper bag in the crisper drawer. They like to be well ventilated so make sure that you leave the bag open to let some air in.

BREAD AND BUTTER ZUCCHINI PICKLES
These scrumptious little quick pickles are just the right amount of sweet and crunchy and are delicious on sandwiches or just as a snack.

GRILLED GRUYERE & ZUCCHINI SANDWICHES WITH SMOKEY PESTO
We adore these. If I’m in a rush, I just use regular pesto rather than making the smokey version here. They’re a quick and easy camping meal too (if you’re into that sort of thing).

Sautéed Zucchini and Summer Squash with Corn and Dill:

Ingredients (adjust amounts based on number of people):
1 or 2 zucchini washed and sliced 
1 or 2 summer squash washed and sliced
1 or 2 fresh ears of corn on the cob, shucked and the corn cut off the cob
1/3 c. finely chopped white or sweet onion
A few sprigs of fresh dill, roughly chopped
1-2 Tbsp butter adjusted based on number of veggies used (this dish really tastes best with butter for all that corn, but a vegan or dairy free butter with “buttery flavor” would probably work too. Olive oil not recommended—the flavor’s just not the same.) 
Salt & Pepper to taste 

1. Melt the butter in a large sauté pan. Add in sliced zucchini, squash and onion and sauté together on medium heat until softened, about 5 minutes.
2. Add corn cut from the cob and sauté about another 5 minutes. Veggies will be done once all zucchini & squash has softened and maybe even slightly browned at the edges. 
3. Remove from heat. Toss in the chopped dill and season to taste with salt & pepper before serving. 
4. For an interesting variation (if you make this as often as we do!) it’s also delicious with a dab of sour cream mixed in once removed from the heat.

ZUCCHINI NOODLES WITH PESTO AND CHICKEN
If you haven’t tried zoodles yet, they’re a super fun way to use your zucchini. If you don’t have a spiralizer, you CAN just chop the zucchini (but you’ll lose a significant number of fun points).

ZUCCHINI PIZZA BOATS
These are a great crowd pleaser. Choose your own toppings are always a hit!
