Microgreens

Microgreens are stage 2 of a plant’s life cycle (Sprouts – Microgreens – Baby Greens – Mature Plant) and contain up to 40 times the nutritional content of the mature plants! I adore these and will eat them straight out of the bag on my way home from the CSA pickup but I also like to add them to sandwiches, salads and load them up on top of my pizza.

AVOCADO EGG TOAST WITH RADISH & MICROGREENS
I like to do a meal that includes eggs at least once a week. They’re always quick and budget friendly and when you have chickens you have stay on top of your egg consumption! We love egg salad and this one is unique with avocado and diced radish for a little crunch.

COLD SMOKED SALMON SANDWICHES WITH MICROGREENS
Use microgreens or pea-shoots in this super quick sandwich. I’ll probably use cream cheese instead of mayonnaise or butter. Great for lunch, a light dinner, finger food at a BBQ or throw it all on a bagel or English muffin and call it breakfast!

Microgreens, carrots, avocado, walnuts and blood oranges make up this vibrant winter salad.

PARMESAN AND RICOTTA CHEESE PIZZA WITH PISTACHIOS, BACON & MICROGREENS
I love making my own pizza and it’s surprisingly easy to throw the dough in the bread machine or Cuisinart but there are many nights when I don’t have time for that. If you’re short on time skip the from-scratch dough and pick up a bag of dough from the supermarket or your favorite pizza shop or, faster still, just use pre-baked crusts or Naan bread. Wegman’s sells them in perfect sizes for individual pizzas and in the summer we through them right on the grill instead of heating up the oven. This pizza sounds amazing with ricotta cheese, pistachios and bacon. I might add a drizzle of balsamic vinegar or honey over the top too.

ROASTED ACORN SQUASH, MICROGREENS & QUINOA SALAD
Microgreens meet acorn squash in this delicious blend of spring and fall. Substitute butternut squash for the acorn squash if that’s what you can get your hands on.
