Lettuce

To get the most life out of your lettuce, shake off the excess water and wrap it in a clean flour sack cloth and then store in a plastic bag in the fridge.

BUTTER LETTUCCE, ASPARAGUS AND HAZELNUT SALAD
While this calls for Butter lettuce, you can use any of the gorgeous leafy greens in your share. Fresh mint, honey and hazelnuts with salty pecorino Romano cheese.

CALIFORNIA VEGGIE SANDWICH
I dare you to click through on this link and NOT make this sandwich. It tastes even better than it looks, if you can believe that!

GREEK CHICKEN CHOPPED SALAD WITH LEMON TAHINI VINAIGRETTE
I love the recipes from this website. They’re always incredibly flavorful and this salad is a great example with fresh herbs, crisp cucumbers and a creamy vinaigrette.

GREEN SALAD WITH HERBS
This recipe will work no matter which herbs you pick and calls for lettuce and arugula.

LETTUCE SOUP
Don’t knock it ’til you’ve tried it! Boston and Bibb lettuce are the typical choices for lettuce soup but any of the sweeter lettuces would work here as well.

GRILLED SHRIMP & LETTUCES WITH CHARRED GREEN GODDESS DRESSING
Yes, the lettuce is grilled too. Don’t be scared, it’s delicious!

SPICY SOUTHWESTERN SALAD WITH AVOCADO DRESSING
Don’t be scared off by the “spicy” in the name – you can make it as spicy (or not) as your family likes. This one is always a winner in our house. I serve it with a side of tortilla chips that I sometimes crush over the top.

SPRING FARMHOUSE SALAD
Carrots, radishes, quick pickled onions, pine nuts, sunflower seeds and crumbled feta all atop your gorgeous spring greens with a citrusy vinaigrette.

SUPER GREEN SUN-DRIED TOMATO HERB SALAD WITH CRISPY CHICKPEAS
Arugula, kale, (OR SUBSTITUTE ANY LETTUCE) dill, basil, chives, feta, avocado, oregano and more! I’m not even a big sun-dried tomato fan and I couldn’t stop eating this salad. So good.

SWEET SPRING LETTUCE SANDWICH
Lettuce takes center stage in this light spring sandwich.

THAI PEANUT CHICKEN RAMEN NOODLE SALAD
Don’t look at me like that! While noodles in salad isn’t something you see every day, you’ll wonder why after trying this. If heat isn’t your thing, skip the jalapeno in the dressing – it’s still amazing.
