Leeks look like giant scallions and taste like a mild, slightly sweet onion. You can use them in most any recipe that calls for onions. Most recipes call for using the white and light green portion only because the dark green part is tougher but it’s delicious braised or added to soups/stews.
PREP TIPS: To prepare leeks for cooking, I usually peel off the outer layer and chop off the very bottom and the top (where it turns green and splits) and slice it up. Fill a big bowl with icy cold water and toss all the slices in and swish them around. The leek slices will all float and any dirt/sand will drop to the bottom of the bowl. Use a slotted spoon (or your hands) to remove all of the leeks and dry them on a clean kitchen or flour sack towel.
CHICKEN WITH CREAMY DILL AND LEEK SAUCE
Whenever I see leeks, I think of this recipe. This is my favorite way to roast chicken. Not only is it super easy but it makes a whole meal in one roasting pan (although I usually add a salad as well). As an added bonus, cooking the chicken on a base of veggies keeps it from splattering grease all over the oven, causing massive quantities of smoke to pour out of the oven and setting off your fire alarms. While this is a great way to ensure that your family knows it’s time for dinner, I prefer the quieter method used in this recipe.
