Garlic Scapes

Garlic Scapes are the stems and flower buds of the garlic plant. Pretty cool really. You can harvest the stems in the spring and bulbs in the fall! It’s one of the few plants that you can harvest twice. They’re great in pesto, hummus, compound butters, stir-fries, soups or used as a substitute for scallions or chives.

STORAGE TIP: Wrap in a damp paper towel and store in a plastic bag in the fridge for up to two weeks.

I love to make pesto in the summer and freeze it for use all year round. It’s perfect on pasta and sandwiches or added to soup.
