Garlic Chives (sometimes called Chinese chives) are high in vitamin C and carotene and are fairly common in Chinese and Japanese cooking. They make a great substitute for garlic. Chopping them releases their flavor and to make the most of them, add them at the end of the cooking time (otherwise the flavor can fade).
STORAGE TIP: Wrap in a damp paper towel and store in fridge. Use within one week.
