Delicata Squash

Delicata squash is my absolute favorite squash. Sweet and not stringy and you don’t have to peel it! When you cook it, the thin skin becomes super tender and is completely edible (and delicious).

DELICATA SQUASH AND KALE TOASTS
These little toasts make a great appetizer, snack or as a tasty side dish with a hearty fall soup.

QUINOA STUFFED DELICATA SQUASH
If you’d rather make more of a meal out of it, try these! Stuffed with quinoa and studded with raisins and hazelnuts.

ROASTED DELICATA WITH MAPLE SYRUP AND THYME
This is my favorite way to make delicata squash. If you’re new to this squash variety, it’s sweet and delicious and the skin is thin and tender and completely edible so no peeling needed!

STUFFED WINTER SQUASH
We make this stuffed squash recipe over and over. It’s super versatile – it calls for delicata, dumpling, or carnival squash but we’ve also used acorn squash with great success. Swap out whatever grains, cheeses, sausages (vegetarian or otherwise) and greens that you have on hand. It’s delicious every time.

WINTER SQUASH WITH VANILLA BEAN BUTTER
Vanilla beans in the butter give the sensation of sweet without additional sugar.
