Claytonia, also known as miner’s lettuce or winter purslane, is a mild and sweet lettuce that is higher in omega 3-s than any other plant and loaded with Vitamin C. The entire plant is edible from the green heart shaped leaves and pinkish stems to the delightful little white flowers.

STORAGE TIPS: Wrap in a flour sack towel or paper towel and store in a breathable plastic bag in the crisper drawer of your fridge. Typically lasts 3-5 days.

This salad is the perfect blend of winter and spring with claytonia pairing with the end of the season citrus fruits.

The lettuce is the star in this simple but incredibly flavorful salad with fresh basil, pine nuts and a rice vinegar vinaigrette.

This bright and zesty pistou is wonderful as a dip or drizzled over fish, chicken or fritters or even used as a salad dressing for even more purslane!
